
Something light and healthy after a weekend of the opposite:
Ingredients for a salad for two:
- 2 tins of cannellini Beans
- 1 bunch of scallions
- 1 red chili
- Lots of fresh arugula (or rocket if you will)
- 2 tbsp white wine vinegar
- A drizzle of olive oil
- Salt and pepper to taste
Directions:
Drain the cannellini beans, rinse and put in a large mixing bowl. Wash and dice the spring onions and chili, add to the beans and add the white wine vinegar, olive oil and season to taste. Before serving (it can be made well in advance to this stage) mix with the fresh rocket and serve as a side to fish or as a light bite in itself.
