A Super Supper Soup…


Broccoli, Bacon and Blue Cheese Soup


Ingredients for A LOT of soup! (approximately 6 servings)

  • 1 large onion
  • 4 cloves garlic
  • 1 potato
  • 1⁄2 pack of bacon
  • 2 heads of broccoli (+stalks)
  • 2-3oz danish blue cheese
  • 1 tbsp of fresh Dijon mustard
  • 1 cube of pork stock dissolved in boiling water
  • Salt and pepper



    Slice the onion, peel the garlic and sweat both in a big saucepan for 10 minutes. Finely dice the potato and combine with the onion and garlic, add a dash of water (or milk) if you feel the bottom of the pan beginning to catch. Cook for 20 minutes or until tender. Chop the broccoli, reserve the florets and add the stalks to the pot and cook for a further 10 minutes. In the meantime, fry or grill the bacon until crispy, and add half of it to the saucepan along with the broccoli florets and top with the pork stock and boiling water. Add the blue cheese and mustard and blend until smooth. Roughly chop over the remaining bacon and add to the soup. Taste, season and then taste again…

    Ladle into bowls and chow down with some fresh bread. Perfect for a cold winter’s night (or day)!






    Replace the blue cheese and bacon with smoked cheddar, radish or even toasted almonds if you’re feeling particularly nutty.
