Cannellini Bean Purée…

Ingredients for approximately one cup:

      • 1 tin of cannellini beans
      • 2 cloves of garlic
      • ½ tsp of chili powder (or fresh if available)
      • 1 tsp of dried oregano (or fresh if available)
      • 1 tsp of dijon mustard
      • 1 tbsp of extra virgin olive oil
      • 1 tbsp of white wine vinegar
      • Salt and pepper to taste

             

            Directions:

            Place all ingredients in a food processor and blend until smooth. Taste and season accordingly. This can be made in large quantities and kept in an air-tight container in the fridge.

            Note: If I had any scallions to hand at the time of making, I would have roughly chopped them and stirred them in after being blended. Half a finely diced red onion might have worked nice too…
