OK… so I may be mixing my nationalities with the introduction of an American beer, but they do work really well together! Also, it’s not as though Tilapia is true to the British offering to world cuisine anyway (I would have to use Cod, Haddock or even Plaice and then deep fry it in a humongous vat of four-day-old vegetable oil). Let’s just consider it my take on a classic!

Ingredients per person:

  • 6-8oz fresh salmon fillet
  • ½ dozen asparagus spears
  • 2 rounds of whole-wheat bread
  • 1 wedge of lemon
  • 1 serving of cannellini purée
  • Freshly ground black pepper

Ingredients per person:

  • 6-8oz swordfish fillet (preferably at least 1” thick)
  • 1 handful of fresh basil leaves
  • Zest and juice of half a lemon
  • 1 vine tomato
  • Balsamic vinegar

Salad Nicoise:


This is an easy and quick one to make because it doesn’t rely heavily upon great timing; it is a salad after all. A few little hints though… to minimize washing up, you only need use two pans. A saucepan for the potatoes to be boiled in and then to throw the (washed)egg in after five minutes and a frying pan for the green beans and then the Tuna. Everything else can be done on the chopping board.
