Samosas (in addition to papadums and naans) have to be one of India’s finest contributions to world cuisine. This recipe uses filo pastry and are baked rather than fried, they’re not quite as delicious as more traditional ones… but they are certainly acceptable as a healthy alternative. That reminds me… I really must get a deep fryer!

Ingredients for approximately one cup:

      • 1 tin of cannellini beans
      • 2 cloves of garlic
      • ½ tsp of chili powder (or fresh if available)
      • 1 tsp of dried oregano (or fresh if available)
      • 1 tsp of dijon mustard
      • 1 tbsp of extra virgin olive oil
      • 1 tbsp of white wine vinegar
      • Salt and pepper to taste

      Broccoli, Bacon and Blue Cheese Soup

      Ingredients for A LOT of soup! (approximately 6 servings)

      • 1 large onion
      • 4 cloves garlic
      • 1 potato
      • 1⁄2 pack of bacon
      • 2 heads of broccoli (+stalks)
      • 2-3oz danish blue cheese
      • 1 tbsp of fresh Dijon mustard
      • 1 cube of pork stock dissolved in boiling water
      • Salt and pepper
